Yields: 8 servings

Ingredients:

  • 2 tbsp organic olive oil

  • 1-2 medium onions (diced)

  • 3 ribs of celery (sliced)

  • 4 medium carrots (peeled and sliced)

  • 4 cloves of garlic (minced)

  • 2 tsp oregano

  • 1 tsp salt

  • 1/2 tsp pepper

  • 2 medium yellow potatoes (peeled and diced)

  • 1 cup fresh green beans (chopped)

  • 14.5 oz can low-sodium diced tomatoes

  • 2 bay leaves

  • 7 cups low-sodium vegetable broth (or bone broth)

  • Additional: add legumes, mushrooms, or tofu for added protein!

Cooking Instructions:

  • Heat olive oil in a large pot over medium-high heat. Once heated, add onions, celery, and carrots. Sauté for around 5 minutes or until softened.

  • Then, add the garlic, oregano, salt, and pepper, and sauté for another minute.

  • Add the potatoes, green beans, tomatoes, bay leaves, and veggie broth. Stir together and bring to a boil.

  • Reduce the heat to low, cover, and simmer for around 20 minutes or until your desired veggie texture is reached.

  • Serve and enjoy!
