Vegetable Soup:

Yields: 8 servings
Ingredients:
2 tbsp organic olive oil
1-2 medium onions (diced)
3 ribs of celery (sliced)
4 medium carrots (peeled and sliced)
4 cloves of garlic (minced)
2 tsp oregano
1 tsp salt
1/2 tsp pepper
2 medium yellow potatoes (peeled and diced)
1 cup fresh green beans (chopped)
14.5 oz can low-sodium diced tomatoes
2 bay leaves
7 cups low-sodium vegetable broth (or bone broth)
Additional: add legumes, mushrooms, or tofu for added protein!
Cooking Instructions:
Heat olive oil in a large pot over medium-high heat. Once heated, add onions, celery, and carrots. Sauté for around 5 minutes or until softened.
Then, add the garlic, oregano, salt, and pepper, and sauté for another minute.
Add the potatoes, green beans, tomatoes, bay leaves, and veggie broth. Stir together and bring to a boil.
Reduce the heat to low, cover, and simmer for around 20 minutes or until your desired veggie texture is reached.
