Sweet Potato Brownies:
These delicious treats make it hard to believe that they are GREAT for you. Sweet potatoes contain many essential nutrients that can aid in brain, gut, and hormone health. Also, sweet potatoes naturally have a sweetness that allows for less sugar in these brownies ( I know it sounds crazy) but trust me, these brownies are worth the make!

Cook Time: 20–25 minutes
Yields: 10–12 brownies
Ingredients:
1-2 cups mashed sweet potato
1 cup peanut/almond butter (whichever you prefer)
1 tsp pure vanilla extract
1/4 cup pure maple syrup
1/3 cup flour
1/3 cup cocoa powder
1 tsp baking soda
1/4 tsp salt
Optional: add mini chocolate chips and iodine sea salt to the top!
Cooking Instructions:
Poke holes and boil 1-2 medium-sized sweet potatoes for 20-30 mins. Once tender when poked with a fork, remove from stove. Peel and mash.
Preheat oven to 325 degrees F and prepare an 8-inch pan with parchment paper or grease (avocado or organic olive oil).
While the oven is preheating, mix the mashed sweet potato, the nut butter, maple syrup, and vanilla extract until well combined.
Next, mix all remaining dry ingredients into the mixture ensuring it’s mixed well and add to the prepared pan.
Bake for 20-25 minutes, or check until your desired texture of brownie is achieved.
Take them out, let cool, and enjoy!
