Chicken & Potato Roast:
This recipe is one of my all-time favorites where the oven does all the work! The seasonings bring it all together, creating a great dish. The chicken and potatoes are crispy on the outside and soft on the inside. Just try it out!

Prep Time: 10 mins
Cook Time: 50-60 minutes
Yields: 8 servings
Ingredients:
8 bone-in skin-on chicken thighs
4 tbsp extra virgin olive oil
1 bag of red potatoes
2 tbsp minced garlic
2 tbsp paprika
2 tbsp onion powder
2 tbsp chili powder
1 tbsp black pepper
1 tbsp salt
4 cups of spinach
Cooking Instructions:
First, chunk your red potatoes add them to a bowl with cold water, and let them sit for one hour. Once they have been in the cold water for an hour, remove them and pat them dry.
Preheat oven to 400 degrees F and grease an 8-inch pan with extra virgin olive oil.
While the oven is preheating, prepare your chicken by adding 1 tbsp of the seasonings and 2 tbsp olive oil to a bowl. Toss these together until the chicken is well coated.
Do this same thing for the potatoes in a separate bowl.
Once the chicken and potatoes are seasoned, place the potatoes on the pan and then the chicken on top.
Cook for 50 minutes then take it out, add the spinach underneath the chicken, and cook for an additional 8–10 minutes or until the spinach is soft.
Take it out of the oven and enjoy!
